Laura Chávez Silverman is the naturalist, forager, teacher, and writer behind The Outside Institute. Until she no longer had the time, Laura wrote Salt of the Earth, a recipe-based column that explored natural and holistic foods. Our Brooklyn cover image for Winter 2021 came from the shoot for Laura's column. It's by Randazzo & Blau and it's one of my all time favorite covers—one that I pushed for against some resistance. Either you love it or you really, really hate it.
